Breakfast – Sweet Potato and Eggs

3 Block Meal

  • 180 grams or 2/3 cups of sweet potato
  • 1.5 cup sliced raw mushrooms (approx 3 large mushrooms)
  • 150 grams raw spinach
  • 4 eggs, (remove the yolks of two eggs)
  • 1/3 tsp olive oil
  • Splash of vegetable stock

If increasing the zone units, add another 2 egg whites but not yolk, or add a rasher of bacon, and have a small glass of freshly squeezed orange juice to make up the carb blocks

I sometimes add fresh basil or if you want to kick start the morning add some fresh chilli!

  • Steam the sweet potato and then mash
  • Boil eggs for desired time  and leave to cool and then peel
  • Sautee mushrooms in vegetable stock with cracked pepper over low heat for 3 – 4 minutes until softened. Add olive oil in the last couple of minutes to give some colour
  • Stir in spinach in batches and mix on low heat until wilted
  • Serve sweet potato topped with mushrooms, spinach and peeled boiled eggs
