Paleo Zone – 3 Block Meal
  • 2 full eggs
  • 2 egg whites
  • 1/3 tsp olive oil
  • 100 grams capsicum diced
  • 90 grams sweet potato, sliced and steamed for 3 minutes
  • 1 cup zucchini
  • 3 mushrooms (1.5 cups) sliced
  • Herbs – basil, thyme, parsley, whatever you prefer
  • Sautee zucchini and mushrooms in olive oil in a small oven proof fry pan
  • Lightly whisk eggs
  • Cover the bottom on the fry pan with a thin layer of the egg mixture, then layer sweet potato
  • Pour the majority of egg mixture on top, layer other vegetables and finish with a remaining egg
  • Garnish with herbs and cook for 10 minutes on low heat
  • Place the pan under the grill for 2 – 3 minutes to ensure the top is cooked
