Quick Penaeng Curry (Mild)

 Paleo Zobne – 3 Block Meal
  • 105 gram chicken breast
  • 135 grams sweet potato diced
  • 165 grams cauliflower
  • 1 cup brocolli
  • 50 grams red capsicum
  • Penaeng Curry paste – check the fat content of these, but will normally use 1 fat block minimum. Prepared paste is fine as long as there is no added sugar, and nothing else the ingredients that is non-paleo
  • 40 mls of coconut cream (check the type you buy. Mine had 9g fat per 60 mls – so 2 fat blocks (9/3) per 40mls
  • 1/2 cup vegetable stock
  • Fresh basil
  • 1/2 lime
  • Heat curry paste in a deep fry pan and stir through diced chicken, stirring until browned
  • Add vegetables, coconut cream and vegetable stock and simmer for 10 – 15 minutes
  • Squeeze of lime juice, sprinkle of fresh basil and voila!
