Swordfish, Prawns, Scallops and Vegetables

Paleo – Quick Meal in 10 mins

Ingredients

  • 180 grams Swordfish
  • 4 prawns
  • 4 scallops
  • 6 asparagus spears
  • 1 baby fennel, sliced
  • 1 cup broccoli florets
  • 1 small red chilli, finely sliced
  • 1 garlic clove, finely diced
  • 2/3 tsp olive oil

Method

  • Heat one large frypan and cook swordfish in a half of the oil. Add sliced fennel on the side of the frypan. Cook fish for 3 – 4 minutes on each side depending on thickness
  • Steam asparagus and broccoli
  • In another small frypan, heat other oil will chilli and garlic. Once sizzling, add prawns and cook for 2 – 3 minutes on each side. Once golden brown, add scallops for a further 1 minute on each side
  • Add fennel, asparagus and broccoli to prawns and scallops and toss to add flavour
  • Serve fish with vegetable combination on the side
