Kangaroo and Stir-fried Vegetables

Ingredients

  • 150 grams kangaroo fillet
  • 150 grams red and yellow capsicum, sliced
  • 1/2 bunch asparagus, cut in half
  • 1/2 bunch brocollini, cut in half
  • 100 grams oyster mushrooms
  • 1/3 tsp olive oil
  • 1/3 tsp sesame oil
  • 1 tbsp Chinese five spice
  • Cracked black pepper
  • Chilli flakes (or fresh chilli)
  • Black seasame seeds

Method

  • Steam brocollini and asparagus for 3 minutes
  • Heat olive oil in a large frypan
  • Once hot, seal kangaroo on each side and then cook for a further 3 minutes on each side. Once cooked, let the meat sit for 5 minutes (the meat should be red in the middle)
  • Heat sesame oil in another fry pan
  • Add mushrooms and capsicum and stir-fry for 3 – 4 minutes
  • Add steamed brocollini, asparagus, chinese five spice and chilli and stir-fry for another 3 minutes or until vegetables are cooked, then sprinkle with sesame seeds and cracked pepper
  • Slice kangaroo and serve on top of vegetables
