Paleo Fish and Chips

Ingredients

  • 150 grams white fish – I’ve used both flake and flathead
  • 1/2 cup coconut flour
  • 1/2 cup almond meal
  • 2 eggs
  • Sweet Potato, cut into fries
  • Coconut oil for frying (you need quite a bit)

Method

  • Preheat oven to 200 degrees
  • Heat coconut oil in a large frypan
  • Add sweet potato and cook for 5 – 6 minutes
  • Once cooked, put into a deep pan and place in the oven to crisp even further
  • Heat more coconut oil in another deep base frypan or wok
  • Mix eggs together in a shallow bowl
  • Mix flour, almond meal and cracked pepper in another bowl, ensuring you remove any lumps
  • Pat fish dry, dip fish into egg and then cover with flour, dusting off any excess
  • Once coconut oil is hot, place fish in the oil and cook for two to three minutes each side
  • Remove fish and place on paper towel to remove any excess oil
  • Serve with fresh lemon and some paleo aioli if you fancy (recipe to come)

Another way to do this is to mix the egg and flour together to create a batter, dip the fish in the batter and then into the oil. I’m going to try the batter next time as I think it will ensure it’s even crispier – just like from the fish and chips shop only 400 times better for you. If you don’t have almond meal, just use coconut flour (ie 1 cup).
