Jo’s Stuffed Mushrooms

Paleo – thanks Jo for this recipe, looks yummo!


  • 4 large portobello mushroom, stalks removed
  • ½ brown onion, diced
  • ¼ red capsicum, diced
  • ½ carrot, peeled and diced
  • 1 celery stick
  • ¼ zucchini, diced
  • 100g of mince meat (Jo used chicken but you can use beef or lamb depending on preference)
  • Olive or macadamia oil
  • Hazelnut meal


  • Preheat the oven to 180 degrees
  • Place stalkless mushrooms on an oven tray
  • Heat oil in a medium fry pan, and then add vegetables and met. Cook for 2 – 3 minutes or until meat is cooked.
  • Once cooked, place mixture into a blender and pulse until a puree is formed
  • Scoop pureed mixture into the mushroom and sprinkle hazelnut meal on top
  • Cook in oven at 180c for 15 – 20mins or until mushrooms are soft
  • Serve with Steamed Vegetables or Green Salad
