Crispy Skinned Salmon with Chilli Vegetables

Paleo – quick mid week dinner

Ingredients

  • 200g salmon fillet, skin on
  • 1/2 bunch of brocollini
  • 100 grams snow peas, ends removed
  • 1/2 bunch of asparagus, cut in half
  • Fresh basil
  • 1 bullet red chilli, sliced (if you don’t like it too hot, remove the seeds)
  • 2 garlic cloves, sliced
  • 1 tbsp olive oil
  • Cracked black pepper

Method

  • Heat 1/2 tsp olive oil in a small frypan. Cook salmon, skin down for 3 minutes. Flip to the other side and cook for a further 2 minutes. If your skin still needs some more crisp, place on the skin side for a further minute
  • Steam brocollini, snow peas and asparagus for 3 minutes
  • Heat remaining olive oil in a frypan, add chilli, garlic and cracked pepper and cook for 1 minute. Add steamed vegetables and cook for a further 2 minutes
  • Serve salmon with vegetables and scatter with fresh basil
