Spiced Lamb with Chargrilled Vegetables

We’re back! Only just got the internet hooked up at the new apartment after our big move upstairs, so I will start posting to make up for the lack of recipes of late. Also have some great recipes from Jo to share. Hope you enjoy them all 🙂

  • 200g lamb back strap
  • 1 bunch brocollini
  • 1/2 red capsicum, cut in half
  • 1/2 zucchini, cut in half and sliced into thin strips
  • 100 gram oyster mushrooms
  • 50 grams brown mushrooms
  • 1 clove of garlic
  • 1 tbsp olive oil
  • 1/2 tsp  cumin
  • 1/2 tsp dried thyme
  • 1/2 tsp sumac

  • Mix dried herbs together in a plastic bag. Add lamb back strap to the bag and shake so the lamb is coated evenly
  • Heat a grill plate or bbq – we have a grill plate on our hot plate in the new apartment, it is amazing, so there will be a number of new bbq/grill plate recipes coming up soon – perfect as we start to finally approach summer
  • In a small frypan heat 1/2 tsp olive oil, add garlic and sliced mushrooms and sautee on medium heat for 5 minutes
  • Brush the plate with some olive oil and place backstrap on the grill. Cook for 2 – 3 minutes each side, then put to the side to rest for 5 minutes
  • Brush the zucchini and capsicum with some olive oil and place on the grill. Cook on both sides until lightly charred
  • Steam brocollini
  • Slice lamb into thick pieces, and serve with mushrooms, brocollini and chargrilled zucchini and capsicum
