Salmon with Avocado Salsa

Paleo – serves 1


  • 200g salmon fillet, skin on
  • 1/4 avocado, diced
  • 5 cherry tomatoes, sliced in half
  • 1/8 red onion, diced
  • 1/2 small red chilli, diced
  • Sprinkle of fresh basil
  • Squeeze of lemon juice
  • 1/2 leek, sliced
  • 1 bunch of baby asparagus
  • 1 tbsp olive oil


  • In a large frypan heat half olive oil. Add salmon skin side down and cook for 3 minutes on each side
  • In a smaller frypan, heat remaining oil. Add leek and cook on medium to low heat until soft (3- 4 minutes)
  • Steam asparagus for 2 minutes
  • Add avocado, red onion, tomatoes, chilli, lemon and basil into a small bowl and mix gently
  • Serve fish on top of asparagus and leeks with salsa on the side
