Glazed Lamb Cutlets with Green Vegetables

Paleo – quick midweek dinner for one

Ingredients

  • 4 individual lamb cutlets
  • 1/2 cup red wine
  • 1 tbsp cranberry sauce (no added sugar) or any other berry jam (no added sugar)
  • 1/2 tsp cinnamon
  • 200g baby spinach
  • 1 bunch baby asparagus
  • 1 cup snow peas (whilst there is debate about whether these are paleo, they are more pod than pea, so I think they’re ok every now and again for something different)

Method

  • Preheat oven to 180 degrees
  • Add wine, cranberry sauce and cinnamon to a large frypan and bring to the boil, stirring continuously until sauce reduces to a thick shiny glaze
  • Place cutlets in a small baking dish. Pour glaze over cutlets and bake in the oven for 8 – 10 minutes
  • Steam asparagus and snow peas for 3 minutes. Remove from heat and stir through spinach. Place in a large bowl
  • When cutlets are cooked, remove and let sit for 2 minutes
  • Pour some of the glaze over the vegetables, mix through and serve
