Tiger Prawn & Avocado Salad

Paleo – serves 1 


  • 8 large cooked tiger prawns, peeled and cut in half
  • 1/3 avocado, diced
  • 50g baby spinach
  • 1/2 bunch asparagus, ends removed and cut in half
  • 1 lime
  • Cracked black pepper


  • Steam asparagus, and leave to cool for 5 minutes in iced water
  • Mix together ingredients, and squeeze lime juice over the salad and season
  • Done 🙂

My family typically has this salad as one component of Christmas lunch – but with pickled ginger mixed through which takes the dish to another level. I highly recommend adding about a teaspoon finely diced if you have some.
