Paleo Fried Rice

Paleo – serves 2 as a main, 4 as a side


  • 1/2 cauliflower, pulsed in the mixmaster or diced very very finely
  • 1 carrot, diced
  • 1/2 red capsicum, diced finely
  • 1/2 zucchini, diced finely
  • 4 florets of broccoli, sliced
  • 2 rashers of rindless bacon, cut into small strips
  • 3 eggs
  • 1/2 tsp coconut aminos or wheat free tamari
  • 1/2 tsp coconut oil


  • In a large wok, heat coconut oil
  • Add carrot, capsicum, zucchini and bacon. Cook for 4 – 5 minutes until soft. Add broccoli, cauliflower, eggs and mix through for another minute or two until eggs are cooked. Add coconut aminos, mix through and then serve
  • To make a more substantial meal, add a cooked diced chicken breast
