Eye Fillet with Mushrooms & Zucchini Noodles

Paleo – serves 2

We are trying to increase our carb intake as we attempt to Paleo Zone for  the month of May, and mushrooms are a great high carb vegetable –  1 cup cooked mushrooms = 1 zone carbohydrate block. Zucchini is also quite high, well compared to Broccoli and other green veges anyway (2 cups zucchini = 1 zone carbohydrate block).

Ingredients

  • 1 x 150g eye fillet (5 blocks), 1 x 90g fillet (3 blocks)
  • 1 cup brown mushroom, sliced
  • 1 cup button mushrooms, sliced
  • 150g shitake mushrooms, sliced in half
  • 300g enoki mushrooms, ends removed
  • 1 tsp olive oil
  • 1 1/2 zucchini, julienned
  • 5 tsp slithered almonds
  • 1 tbsp lemon juice
  • 1 tbsp fresh mint, sliced
  • 1 tbsp fresh basil, sliced
  • Celtic sea salt and cracked black pepper

Method

  • Take meat out of the fridge and season with salt and pepper
  • Place the slithered almonds under the grill and cook until golden
  • Heat  2/3 tsp of oil in a large deep based saucepan and add mushrooms. Cook for 5 – 6 minutes on a medium heat, stirring occasionally
  • Heat the other 1/3 tsp of oil in another frypan and add steak once hot. Turn every minute for approx 4 – 5 minutes depending on your preferred taste (4 – 5 minutes for medium rare). Let rest for 1 – 2 minutes
  • Place zucchini in a bowl add lemon juice and a pinch of celtic sea salt. Add mint, basil and some cracked black pepper
  •  Add warm almonds to salad, and serve with mushrooms and steak
