Chocolate Nut Balls

Paleo – makes about 20 bite sized balls

Ingredients

  • 250g walnuts
  • 1 tbsp raw cacao powder
  • 1/2 tsp cinnamon powder
  • 9 pitted fresh dates
  • 1/2 tsp boiling water
  • 1 vanilla bean, scraped
  • 1 ripe avocad0
  • 3 tbsp raw honey
  • 3 tbsp cocoa powder

Method

  • In the mixmaster combine walnuts, cacao and cinnamon. Pulse until a coarse texture (not until powder)
  • Add dates, boiling water and 1/2 vanilla bean. Mix until combined, if not combining when you squeeze between your hands add some more dates
  • Roll into bite size balls and place in the fridge for 2 hours
  • In a small mixmaster puree avocado for 2 – 3 minutes until it forms a mousse like texture. Add vanilla bean and cacao and honey. The taste may vary depending on the avocado, so add cacao and honey until it tastes good
  • Spoon some of the mousse on top of the nut balls, dust with extra cacao and refrigerate again until ready to serve
  • If you have excess chocolate mousse, pop in a small bowl, refrigerate and enjoy by itself

NOTE: if you don’t plan on eating all the nut balls at once, then don’t put the topping on all of them. The mousse will last 2-3 days max.
