Paleo “Get Better” Brownies


Our house has been hit with the latest cold/virus/killer bug and whilst I have been fortunate enough to have a few afternoons off work to recover, Dan has quickly realised possibly the only negative of running your own business – no sick leave. So this afternoon, stuck inside the house on a beautiful day, feeling like my head was going to explode and not being able to stand another minute of terrible tv, I decided to bake. It certainly made me feel better, and I’m hoping these will cheer Dan up as well when he gets home tonight after another long day. Let’s face it, no caveman ever made brownies, and we can’t fool ourselves into thinking these are “healthy”, but they are a good occasional treat, they’re too rich to eat the whole batch at once and they are better for you than any brownie you will buy in a shop.


  • 1 cup raw organic honey
  • 3/4 cup raw cacao
  • 1 egg
  • 1 cup (250ml jar) almond butter
  • 2 tbsp raw hazelnuts
  • 1/4 cup flaked almonds
  • 1/4 tsp baking powder
  • 1/2 vanilla bean, scraped


  • Preheat the oven to 160 degrees
  • Place the almonds and hazelnuts on a baking paper lined tray and cook until golden (keep an eye on them). Set aside to cool and remove any shells on the hazelnuts (if they have any) and break into smaller pieces in a morter and pestle
  • In a small saucepan heat the honey over low heat. Add in the raw cacao, 1/4 of a cup at a time and stir until combined. This may take some time, be patient and don’t turn the heat up as the cacao may burn
  • Remove from the heat and add almond butter and mix through
  • Add the egg, vanilla and baking powder and quickly combine
  • Scatter roasted hazelnuts and almonds through the mixture, stir through and then pour into a small – medium sized baking paper lined cooking dish. I like my brownies thick, so I used a small rectangular baking tray
  • Cook in the oven for 40 – 45 minutes, until a toothpick comes out clean in the middle. Set aside to cool and then cut and serve. If you like your brownies chewy, cook them for closer to 40 minutes, or more cake like, maybe 50 minutes. 45 minutes was perfect for me, crispy outside, chewy inside 🙂
