Chocolate Cups

Mandy bought in some homemade chocolate this week that all the boys have been raving about, so I thought I would experiment with a version (until I get to taste hers) after I spent up big at the health food shop today. The basic chocolate recipe is simple – coconut butter, raw cacao, maca and agave. The rest is up to you so feel free to play – add some dried fruit, roasted nuts, leave out the chia, whatever floats your boat.  I have read a recipe which added protein powder as well – if you add some chocolate or vanilla protein powder I’d probably leave out the agave.

Ingredients

  • 1 cup coconut butter/oil
  • 1/3 cup raw organic cacao
  • 3 tbsp maca
  • 1 tbsp raw organic light agave (could use honey or stevia instead) – if you have a sweet tooth feel free to add more
  • 4 tbsp chia seeds
  • 4 tbsp raw organic cacao nibs
  • 3 tbsp coconut flakes

Method

  • Place a glass bowl over a boiling saucepan. Heat coconut oil until all dissolved
  • Stir in raw cacao, maca, agave, and chia seeds
  • Add cacao nibs and coconut flakes and pour into mini cupcake patty pans sitting in a mini cupcake mould
  • Place in the freezer for 15 minutes or the fridge for 30 mins to set  – the photo below is just out of the freezer, make sure you leave them to sit for a minute before eating
