Paleo Snack Balls

I promised a girlfriend some paleo snacks for our trip to Kyneton today, so I whipped these little balls of superfood goodness together.  They seriously take less than 5 minutes. They are quite sweet as I wasn’t feeling like anything too nutty, but as always, feel free to play with the recipe to suit either what you have in the cupboard or what you are craving.

Makes approx 15

Ingredients

  • 10 medjool dates, pitted
  • 1 tbsp craisins
  • 2 tbsp flaked almonds
  • 1 tbsp walnuts
  • 1 tbsp raw cacao nibs
  • 3 tbsp maca & raw cacao smoothie powder (alternatively just use raw cacao)
  • 1 tbsp chia seeds
  • 1 cup shredded coconut

Method

  • Mix together all ingredients in the mixmaster. Pour into a bowl and kneed together with your hands
  • Once totally combined roll into bite size balls and cover in coconut
  • Serve
