Chicken Minestrone

Paleo – serves 4

It doesn’t look that pretty, but it tastes amazing 🙂

Ingredients

  • 1 brown onion, diced
  • 2 cloves of garlic, diced
  • 3 celery sticks, diced
  • 1 1/2 carrots, diced
  • 1 zucchini, diced
  • 2 large tomatoes, diced
  • 250ml vegetable or chicken stock
  • 250ml water
  • 1 sachet tomato paste
  • 500gr chicken tenderloins
  • 2 rashers rindless bacon, diced
  • 2 tbsp dried basil
  • 2 tbsp fresh chives
  • 2 tbsp olive oil

Method

  • In a large soup pan, heat the olive oil on medium heat. Add onion, garlic, basil, salt and pepper and sauté until onion starts to turn translucent
  • Add carrot, bacon, celery and zucchini and cook stirring continuously for 2 minutes
  • Add tomatoes and chives, cooking for a further minute or two
  • Add stock, water, tomato paste and stir to combine
  • Dice chicken up into little pieces and add to the pop – reduce to simmer with the lid on for 10 – 15 minutes
  • Remove the lid and blitz with a mixmaster stick (if you don’t have one then take some soup out and blitz it in the blender). This adds some texture and thickens the soup up, I still like having some chunky bits so I fell like I’m eating something, but blitz as much as you like
  • Serve with fresh chives and cracked black pepper on the top. To add some crunch, crispy bacon strips is also a nice garnish (or chilli flakes for some bite)
