Swordfish with Pesto Zucchini Noodles

Paleo – serves 2

This dairy free pesto is a great staple to have on hand during paleo challenges – it just takes otherwise bland dishes to the next level and has that little bit “gourmet” feeling to it. Again, a really quick and nutritious mid-week dinner, if you have the pesto pre-made this will take less than 10 minutes from fridge to plate.

Ingredients

  • 2 pieces of swordfish
  • 1 1/2 zucchini, cut lengthwise into long, flat strips with a vegetable peeler
  • 1 bunch broccolini
  • Olive oil for cooking

Basil Pesto

  • 4 tbsp toasted pinenuts
  • 1 bunch basil, stalks removed
  • Good slug of olive oil (maybe 3 – 4 tbsp)
  • Salt and pepper

Method

  • Mix together pinenuts and basil in a mixmaster. Add olive oil, salt and pepper and blitz again. Keep in an air tight container, adding more olive oil if required
  • Steam brocollini for 3 minutes
  • Heat a large grill plate, brush with olive oil and cook swordfish for 3 minutes either side
  • In a medium frypan heat basil pesto, stir through zucchini “noodles” and cook until combined, for a minute or two maximum. Mix through brocollini and serve with fish
