Chicken & Shiitake Meatballs

Paleo – serves 2 as a meal, 4 as a snack

These are a great meal, or simple snack, filled with flavour and great for the 3pm sugar craving. These ones were made as snacks, but can be served with mixed salad or stir fried mushrooms and green vegetables (enoki, button, shiitake mushrooms with bok choy and broccoli cooked in ginger and coconut aminos).


  • 500g free range chicken mince (thigh or breast, mine was a combination of both)
  • 40g dried shiitake mushrooms
  • 1 egg yolk
  • 1 tsp dijon mustard
  • 2 spring onions, green portions sliced finely
  • 2 tsp coconut aminos
  • Olive oil for cooking


  • Pour enough boiling water to cover shiitake mushrooms. Leave for 5 – 10 minutes then drain and dice
  • In a small bowl mix together chicken mince, mushrooms, spring onions, yolk, dijon mustard and coconut aminos
  • Roll mixture into small balls and cook in a large frypan on medium heat with some olive oil to prevent sticking
  • Cook for 3 minutes either side (depending on how big they are), turning every minute to prevent burning
