Salmon with Peach & Prosciutto Salad

Paleo – serves 2


  • 2 x 200g salmon fillets
  • 2 x peaches, cut into wedges
  • 1 handful of fresh basil leaves
  • 3 pieces of good quality italian prosciutto, cut into quarters
  • Dash of basil oil
  • Cracked black pepper
  • Olive oil for cooking


  • Preheat olive oil in a large frypan and cook salmon for 3 minutes on either side
  • In a small bowl mix together prosciutto, basil, peach, drizzle with olive oil, season with pepper and serve with salmon
