Superfood salad

Paleo – serves 2

Ok maybe not super food only, but this salad is pretty super and I’ve posted a few chicken salads recently so needed to get your attention. Inspired by Teresa Cutter’s warm broccoli salad – check out her site the Healthy Chef for some great pale recipes, but it is served cold so working week lunch friendly.

Ingredients

  • 2 cups finely sliced kale
  • 1 bunch of broccoli, broken into florets
  • 1 chicken breast
  • 1 cup chicken stock
  • 1 cup water
  • 1/2 cup tamari almonds
  • 1 green chilli, sliced finely
  • Juice of 1 lime
  • 1 tbsp basil infused olive oil
  • 1/2 tsp apple cider vinegar
  • Celtic sea salt and cracked black pepper

Method

  • To make tamari almonds, coat almonds in gluten free tamari and bake in a 50 degree oven for 4 – 5 hours
  • Add chicken stock and water to a large saucepan. Add chicken breast and poach on low heat for 10 minutes, adding more water to cover the chicken breast totally. Turn heat off and leave chicken in mixture for another 10 minutes. Remove and slice
  • Steam broccoli for 3 minutes, then refresh in cold water
  • In a small jar mix together chilli, lime, olive oil, apple cider vinegar and season with salt and pepper. Shake together
  • In a large bowl mix together kale, broccoli, chicken, dressing and combine. Add chopped tamari almonds and serve
