Paleo Bircher Museli

Serves 4 – 5 

This is AMAZING. I had been craving something sweet and different for breakfast, and this satisfied it. It only keeps for about 3 days, but I’m sure you’ll be able to eat it all, it’s quite moorish. Again it depends on your definition of quinoa – but whatever your definition, quinoa flakes have to be better for you than oats. Sorry Mandy it’s taken me so long to post the recipe 🙂

Ingredients

  • 2/3 cup quinoa flakes
  • 1/3 cup almond slivers
  • 1/3 cup coconut flakes
  • 1 tbsp chia seeds
  • 1 tbsp sunflower seeds
  • 1 granny smith apple, grated
  • 2 kids pack apple and dried sultanas (about 1/4 cup total)
  • 4 dried turkish apricots, diced
  • 1/2 cup apple juice (from your juicer preferably, otherwise 100% apple juice)
  • 1/2 cup coconut cream
  • 1/2 cup almond milk
  • 1 tbsp cinnamon
  • 1 tsp nutmeg

Mix all together, leave overnight and enjoy 🙂
