Grass Fed Beef Burger and Cauliflower Fried Rice with Pancetta

This dish was surprisingly good! It was only due to me forgetting to pick up some ingredients for the side I was suppose to have that this dish came about. It was so good that I decided to share. I have recently been really enjoying cauliflower fried rice and I have been experimenting with all different ingredients to put with the cauliflower so this is also how this dish came about. The pancetta gives it a unique taste that I really enjoyed. Try it for yourself it was amazing!

Ingredients

Grass-fed Beef Burgers

  • 500g grass-fed ground beef
  • Himalayan Pink Salt & Fresh Ground Pepper
  • Any other seasoning you like! (I used garlic granules and cayenne pepper this time)

Cauliflower Fried Rice

  • 1/2 Cauliflower Head
  • 1 Large free range egg
  • 60g of Pancetta
  • 6 Spring Onions (cut in 1/2 inch pieces)
  • 3 Cloves of garlic (crushed)
  • 1  Red Bell Pepper (cut in 1/2 inch pieces)
  • 1 Cup of cooked peas
  • 1 Small brown onion (diced)
  • 3 tbsp Coconut amino’s
  • 1 tbsp Sesame oil

Instructions

Grass-fed Beef Burgers

  1. Take meat out of the fridge and allow it to come to room temperature for 20-30 minutes.
  2. Divide the meat into 3 parts and by hand, create 3 separate patties. Heat a sauté pan to medium heat.
  3. Season both sides of the patties with salt and pepper (and any other seasoning you like).
  4. Place all 3 patties in the pan for 3-5 minutes per side.
  5. Remove from the pan and allow to rest for a few minutes.
  6. Serve on bed of fried rice.

Cauliflower Fried Rice with Pancetta

  1. In a food processor blend cauliflower head until it resembles rice. Be sure not to over do it.
  2. In a pan heat up the sesame oil over a medium heat and the add the cauliflower rice, brown onions, pancetta, coconut amino’s and garlic and cook for 4-5 mins.
  3. Then add in the spring onion, cooked peas, bell pepper and crack the egg into the mix. You must continue stirring until egg is cooked through the rice.
  4. Remove from heat and serve with the beef patty.

Mustard-Mayo Sauce

  • 1/2 cup of home made mayo
  • 2 Tbs of Mustard

Mix together and serve.
